A native of Mexico, Chef Abascal has trained under three-star Michelin chef Pascal Barbot at L'Astrance in Paris and served as Chef and Director of Food & Beverage of the acclaimed Koba Casa Club in Mayakoba with multi-awarded Chef Enrique Olvera. Combining the vanguard with classical techniques, Abascal's versatility, innovation, flavors of the world and use of local ingredients are just some of the elements that will impress you.
